Australian Lamb Loin

150 g Lamb rack
100 g Lamb loin
60 g Lamb jus
60 g Grilled mix vegetables
1 g Rosemary
10 g Salt and Pepper
30 g Olive oil

Marinade Lamb rack and lamb loin with salt, pepper, rosemary and olive oil. Keep aside.

Grilled mix vegetables:
Zucchini yellow and green
Cherry tomato
Asparagus (Optional)

Lightly brush vegetables with olive oil.
Some veggies akes a minute or two to cook. To prevent burning, sear vegetables over high hit then move to cooler part of the grill

Meat Preparation:
Bring marinated lamb rack and lamb loin to grill to get mark

Transfer to the oven for 10 minutes in 180C

Remove lamb from Oven and place as your desire with mix grilled vegetables and lamb jus

You have an option to tenderise the lamb before you marinade. Depending on your preference, make sure to know what work best with the lamb part you are grilling. Lamb is usually best cooked between rare and medium Before grilling, ensure that the meat has good coat of oil. Lamb has a strong flavour so make sure to complement it with the right seasoning. Let the lamb rest for 10 minutes before serving.
