Tomato & Roasted Red Pepper Soup

There are numerous reasons why a lot of people start their meal with a good soup. Not only is a well-made soup delicious, it is packed with all nutrients necesary for promoting good health. In the Middle East especially during Ramadhan, a good soup provides you a good alternative way to rehydrate. Because of its high water content, it satisfies your cravings in a healthy way. Most soup are also affordable and quite easy to do. There are some soup that you just dump everything in one cooking pot and come back to it done. For parents who have trouble introducing veggies to their kids, it’s also a brilliant way of improving kid’s tolerance amongst youngsters. With diverse cuisine to choose from, we recently checked out their menus and took something out that is totally exceptional in flavour and taste to share with you. We hope you enjoy doing this soup the way we enjoyed its excellent preparation and demonstration from its chef. Ingredients: 3kg Peeled Tomato 1kg Red Pepper 240g Red Onion 3 g Garlic 130g Celery 200g Olive oil 2.4 litres Water 20g Thyme 2g Rosemary 25 g Salt 10g Black Pepper 30g Paprika powder Methods: Peele onions, garlic and celery stalks and chop roughly. Pre heat oven to 180° Celsius place the pepper and onion wedges along with the garlic cloves into a baking tray, drizzle with the olive oil season with salt and pepper. Roast in the oven for 30 mins or until the vegetables are roasted and tender. Meanwhile heat the Olive oil a large pan over a medium heat and sauté the chopped Celery. When the roasted vegetables are ready, add them to the pan along with the plum tomatoes. Cook over medium-low heat until all the tomato juices have evaporated. Add water salt and pepper, thyme, rosemary and paprika powder Bring to boiling, lower heat, and simmer, partially covered, for 20 minutes or until vegetables are tender. Season to taste, place solids in food processor or blender, and process until fairly smooth.
